I made some raw pudding today and, while it was quite good, even after awhile in the fridge it never really thickened up like traditional pudding. It really was more like a smoothie than a pudding.

The recipe I used called for young coconut water & meat, agave, vanilla, carob powder & a little salt. I also added a scoop of raw fudge sauce to make it a little richer.

Any idea if there's anything that could be added to thicken it up a bit like traditional pudding?

Try blending in come coconut oil and/or cashews. That always works for me. I add cashews until it's the texture of yogurt. After a day in the fridge the coconut oil sets it up like a pudding.
