Excuse me while I'm typing in between bites. I just whipped up some seriously scrumptious fudge in my food processor.
I've used this recipe before and always loved the results, but tonight was especially good. Here's how it went.
The recipe calls for 3 cups of walnuts, process until buttery. Then add 2 cups of shredded coconut, 5/8 cup agave and 1/2 cup carob. Well, I didn't have all the ingredients, so I modified as such:
1 cup walnuts
1 cup pecans
1 cup almonds
(I didn't have 3 cups of any one nut so I just made do)
Whirl in the food processor until seriously--and we're talking seriously--buttery. It took me a while with several interruptions to scrape down the sides.
Then add:
about 1 cup dried shredded coconut. (if that. I was pouring out the last remains from the bag)
1/2 cup raw cacao powder
between 3/4 cup to 1 cup agave.
Now whirl it up all again until it forms a delicious fudgy lump. The best part is, after giving it a few minutes of good spinning, it will be all warm!
So do enjoy it while it's warm. The rest you can press into a brownie dish for later. I think I want to try it as a pie crust too. That might be really interesting.
