I have a question. I am just now learning to make my own salad dressings and I noticed that some recipes call for minced, fresh and powdered herbs. My question is if a recipe calls for fresh or minced would it be OK for me to use powdered herbs and vice-versa - if a recipe calls for minced or powered can I use fresh?:confused: Help! I am really new at making my own.

As a general rule the ratio for fresh to dried is 3/1. Even less for powdered herbs. If the recipe calls for 1 tablespoon of fresh herbs, substitute with 1 teaspoon of dried herbs. You can always add more.:)

Dried is more potient than Fresh because all the Water has been taken out. Your Best judge of how much of Anything to use is.....Your Taste.
