Hi everyone,

I have been working on this whole raw thing for about 3 weeks now (and loving it!), but I can't seem to find anywhere on the net, or in the 3 recipe books that I purchased that specifies whether nuts are to be soaked in or out of the shell?

Do I crack them and then soak them, or soak them and then crack them?

I did find a couple of useful posts in the archives here about which types of nuts to soak and for how long, but no mention of shelling. I feel like I must be missing the obvious here...

Crack them , then soak.....the enzyme inhibitor, which is what you are getitng rid of when you soak them is on the surface of the nut, not on the shell. Best of luck~*s*

Yes.....they are talking about nuts that have already been cracked unless they specifically tell you otherwise. This has been my experience.

I tried soaking them (almonds) in their shells and they were all floating, naturally. I was worried that I had a bad batch, as some of my reading has suggested that the ones that float are rancid and should be tossed!

On the subject of nuts and soaking. I have found many recipes that do not specify soaking but I think some are meant to be soaked.

I know I will learn by experience, but I would appreciate if someone can describe their own experience in the difference in using soaked or unsoaked nuts in recipes. How does the final product differ?

I like to put in plenty of water because depending on what you're soaking - they can really soak up that water! For example, last night I soaked almonds and this morning they appeared to more than doubled in size.

I typically put in at least twice as much water as nuts/seeds. *Ü*

anyone have a good rule of thumb for someone who has never soaked nuts?

like 1/2 C almonds in 1 cup water or something like that..taking a guess.....

I hate to admit this but I eat nuts almost every day and I have never soaked them! :( Do they taste the same after they have been soaked? If soaking is going to remove all of the flavor I would just rather not soak them. Help!:confused:

Soaking allows the enzyme inhibitors to deactivate, which is healthier and why I do it. It doesn't really change the flavor. It just makes them a little softer; you can dehydrate them to make them harder again.

I wouldn't like them softer. If I refridgerate them after soaking with they firm up again?

I'd been wondering about soaking nuts too.

If I soak them overnight, then drain, dry, and then store in a container, is that still good? And if so, for how long can I store them? OR are the nuts supposed to be eaten still soaked?

i do better with soaked for sure but my disappointment is that i can't get them to firm up and get crunchy again.

i dehydrate and dehydrate and it just doesn't happen for me

i can get "sprouted almonds" at the coop that just pop and are incredible..but can't seem to replicate it

any tips?
