View Full Version : Is My Mesquite Raw?

I just purchased some mesquite powder online for a fairly cheap price (much cheaper than usual) but I have concerns about it.
It has a slight roasted / cooked taste, especially compared to the previous mesquite powder I bought from another seller which was guaranteed raw. I e-mailed the seller of this latest powder asking if it is raw. He told me that it has been subjected to warm air only, which is what I would expect from the dehydrating process.
Is it usual for mesquite powders from different suppliers to have noticeably different tastes? Also, is it usual for raw mesquite to have a slightly cooked taste?
If anyone has any insights to share on this issue, I would be grateful to hear them.

I've always found mesquite to have a smoky taste. There are several different species of plants that produce mesquite, so taste could very from one company to another. I <3 mesquite.

Thanks for your reply.
A smoky taste is a very good way to describe it. I wonder, though, if it is common for mesquite to be over-heated during drying? Perhaps a lot of mesquite is actually cooked and not raw at all?
There really is a big difference in taste between the two purchases of mesquite that I made.

I've only known Mesquite as a Tree, which the wood is used mostly for bar_b-queing. Usually it grown in Texas. Now you might be able to find a Spice that will mimic the Flavor. And of course it is not RAW but I am sure you are using so little.........

I am now, after buying mesquite from several sources, fairly convinced that a lot of mesquite is not truly raw but has been high-heated. The mesquite I buy which is stated as being raw is very different to that mesquite which is not stated as being raw. The non-raw stated mesquite does have a smoky, slightly cooked taste whereas the raw mesquite does not. The mesquite sold as raw tastes profoundly different, and much better.
