Hi all! It's been FOREVER since I've posted but I need the help of my fellow rawbies!
I have been asked to make some raw food for some very important people who will be giving a lecture at my church. These are people that have experienced raw (out in Cali ~ so I'm sure it was fabulous) and I need to find something delicious and filling for them to eat while they are here presenting.
It can't be anything that sticks to the teeth, causes bad breath or diarrhea (GASP! :eek:) but is filling and fabulous.
Anyone have any tried and true that are a hit so I don't embarrass myself completely? I am already afraid I will pee myself when I meet these people, I don't need any more stress! Thanks peeps! :D

Alissa's Chili, any lasagne and a salad; all of Russell Jame's Thai recipes... PureJeevan has a truly great recipe called "Lemony Luminous Surprise" which is quick and easy and the ebook is FREE!
You know, people from California are no different than anywhere else. To me, the food in the restaurants here rarely taste good (except for the desserts!)... I'd rather eat much of what comes to our potlucks.
Suggestion: create something that's easy and delicious and don't make out folks from Ca. to be anything special. We aren't... well, I yam, but, I'm not coming to your church.
Most of all, just play with your food, 'k?

Believe me, the fact that they are coming from Cal. has nothing to do with how incredible they are.... that's just where they happen to reside. They just happen to be a few people I have an insane amount of respect for and it is a true honor to be serving them food ~ it's a self esteem issue on my part (my own demons, thank you) which is why I am looking to all of you more seasoned recipe preparers. If I were creative kitchen wise, I wouldn't be stressed. I've got a few ideas but nothing is jumping at me. :confused: Although lasagna has caught my eye....

..and justinesmith, don't have any great ideas cause I'm pretty new to raw and usually am the one asking advice, but I wanted to say how cool it is that you get to "uncook" for someone you respect so much.. I know you will do great!!

What is your time line? Do you have to prepare on site or can you make it at home and bring? HOw many are you feeding and how many dishes do you want to serve? I have some ideas but need to be able to narrrow it down! :o

OK this is what I serve for an impressive meal. It can all be done in advance with the main just needing a few bits of garnish added!
Creamy Carrot-coconut-Lime soup
Amazing pumped-up Pad Thai
Chocolate Ganach torte
Ok the soup - OMG after years this is still my favorite - and torte are from RFRW. If you do not have the book I will get you the recipes. The Torte can be made in a configuration that suits you. A jelly roll pan, a brownie pan, mini or reg cupcake. Or go gourmet and use individual bakers rings (simple round high cookie cutters).
The Pad Thai is an adaptation of Alissa's I have adapted to may tastes to make it just. . .more. This version is super complex is flavours and textures.
Let me know if you would like the recipes. I have made these three dishes time and time again with great success!

Sorry to hijack this thread...do you have Alissa's book? It's got over 300 recipes in it. I have not found a recipe of hers that I did not like.

Thanks everyone! The soup sounds FABULOUS and I have that book. I've got Alissa's (it's my messiest as I use it most) book and I think I've narrowed it down. I have to prepare ahead of time and transport it. Lasagna will be great too. It's on saturday morning.... I need to find out if I am serving breakfast as well as lunch. All will be well..... thanks to everyone who gave me ideas!! :D

Hey chica!
Sorry it took me so long to get back to you. I remember you saying the food needed to be able to set out for a while, so I'm thinking any kind of marinated kale salad or slaw would be good (they get better the longer their flavors meld together). Also, for desserts, cookies/macaroons would be good because they don't need to stay chilled like a pie or a fudge/chocolatey thing might.
Also, any kind of lasagna or chili dish where it doesn't matter that it's sitting out works as well. Plus, some cucumber water for hydration would be nice as well, gives it that special touch. You are going to do GREAT!
I unfortunately won't be able to make it. And I'm REALLY not happy bout that! :(

If breakfast as well, the crepes, definitely the crepes, or some pancakes. There are some good ones at The Raw Table (I think that's where Anna had them), as well as some other great ones out there. You will do GREAT! :D

Brilliant!! Crepes.... of course. Lasagna is in for sure. EPPP suggested a delicious sounding soup and if you have a good recipe for a marinated salad, I'd be ever so obliged! I picked up some raw cashew cheese at Life (I cheated a little bit) but I won't use it if I can figure out how she makes it soooo creamy. Anywho, thanks girls!
