I'll only need a little at a time since it's just me eating the raw dressings, but I want to make a full batch so I have it on hand when the craving strikes, can I freeze them, and say start thawing in the fridge the night before?

Sure, why not. If you can freeze practically everything else liquid, it should work fine. May be a little watery, but then you stir it or make it very thick to begin with.

Haha, I was about to start this same thread! I did freeze my dressing this week 'cuz I have to pack my lunch & use no fridge at work. It worked out just fine! (Snowdrop's Ranch Dressing, my fave!)

Oh this is interesting. I never made the recipes of any dressing and try to make my own custom one in very small quantity. I never thought of freezing. Once you thawed it out, was it tasting fresh? I might give a try.
