Besides soaked barley? I was using barley to replace rice, but I am getting bored with it. Any other grains that taste good as a rice substitute that I can soften up by soaking for a few hours?

How about quinoa? Or is that a grain you have to cook to soften?

Yes Quinoa, oats, Wheat to name a few, you can also use Cauliflower as Rice.

Sorry, what are you saying "yes" to? Yes, you have to cook them, or yes, you can eat them raw by soaking in water?
