So I was really wanting to make guacamole out of an avacado I had (I'm so happy I found avacado and the miracle of guacamole. I was so scared I wasn't going to be able to eat my favorite dishes because all those dishes included sour cream. Guacamole completely substitutes for this and I love it!), but I ran out of time and wasn't able to do anything with it, so I stuck it in a container and put it in the fridge. I know most frozen fruit and veggies are fine to use after freezing, but does freezing do anything bad to avacado? Can it be used just the same after freezing?

I made a lime cream pie with the avocao and freezed it, and it was still a beautiful color when i took it out from the freezer.
My guess, it should be fine with the guacomole.

Trader joe's used to sell them frozen and my Dad used to use them in his guac. I have used them frozen in soup and smoothies and they were fine.
Thanks! So, is there any way to eat rice and it be raw? Two of my favorite dishes (which are essentially the same only one has cilantro and corn added to it) contain rice, black beans, lettuce, quacamole, and salsa. Is there any way to make this dish raw?

There was a thread going around about freezing avacados, I think it was spicyfull that talked about freezing avacados with the pits still in them because it helps them to keep their color..... good luck.

recently i've tried pulsing cauliflower and parsnips in the food processor as a substitute for rice. after adding seasonings it was quite good.
i also have used frozen avocado for guacamole. i cut them in half, remove the pit and freeze them in a freezer baggie with the pit to retain the color. they are a tad watery after they thaw out, but are still great in smoothies, soups, pudding, guacamole, etc.
What about black beans? Could you soak them overnight or something?

I made the most incredible rice dish the other day. I soaked rice ( it was a wild and long grain combo) for two days rinsing each day. Then I sprouted it. The long grain sprouted, it took a couple more days. Then I rinsed it all and mixed it with chopped green apple, cilantro, avocado, celery, carrot, corn, some olive oil and a little balsamic vinegar. ( I think I should have used Braggs but I didnt have any) I ate it right away and it was really good. But the next day it was even better.
So, does soaking it for a few days soften it as if it were cooked?

I have seen recipes that used wild rice which had been soaked for a day or so (Ani Phyo has a youtube video with a recipe like this). Basically, what you are doing there is "sprouting" it - you must drain and rinse it three or four times, then return it to soak.
I use grated parsnip (run it through the food processor). It works for me. I use it when I make "sushi".
If you want to use black beans, you need to soak them overnight, then sprout them for two days before you use them.

Do you find black beans really gassy? Asking as I have been reading that most sprouted beans are not very digestable.

I agree.
Even when beans are sprouted, they still give me some digestive issues.

Yes, but not as much as if it were cooked.
