Since I'm trying to eat as raw as possible, I wanted to find something to do with a sweet potato. My grandmother gave me one since I like to eat them with brown sugar. Is there anything you can do with a raw sweet potato?

Chips in the dehydrator, Or juice it with carrot or ginger. I feel the skin off of them too .

Hmm. I don't have a dehydrator yet. I probably won't have one till my birthday in May. I might try juicing it. I'll have to get some ginger. Thanks!

Nope problem- if you are using ginger start off slow - I find it to be a bit spicey.

I love them in pasta. I just use my food processor to shred them and make any nice yummy sauce.

If you used to eat them with brown sugar, perhaps, you can try a little desert with either raw honey or raw agave. I would sprinkle raisin and cinamon and even some walnut or any seeds or nuts. I would shredded them with a the food processor.

I love sweet potato. Also, consider to do a soup if you have a good blender. Any carrot soup recipe would be able to be substitute with the sweet potatoes.

I have a bottle of agave. It doesn't say anything about it being raw. I guess I'll have to look at the store for a bottle of raw agave. I've only used my bottle of agave once, so I'll have to try it out in different things. It sure is sweet!

I don't have a dehydrator, i am new to raw, i just use my blender for everything i have only been on raw for 3 days and loving it.

I love sweet potatoes, and I prepare them often.
Here is one of my favorite recipes.

AMAZING SWEET POTATOES
2 - 3 sweet potatoes (or yams)
1 C coconut, dried
2 apples
1/4 C ginger root
4 lemons juiced
2 oranges, juiced
1 C walnuts, chopped fine

• Chop sweet potatoes, apples, and ginger, and run through Champion juicer with blank plate. (Alternatively, grate sweet potatoes, apples, and ginger in a food processor).
• Remove mixture to a large bowl. Add shredded dried coconut, lemon and orange juices, and chopped walnuts.
• Mix thoroughly

Made through the Champion juicer it comes out very much like mashed sweet potato. If you make it with the food processor, it will not be as smooth, but it still be good.

I like this recipe the best of the sweet potato recipes I have because it is relatively low in sugars.

If you are accustomed to eating cooked sweet potatoes with sugar, you might like to try this one - it is a pie filling that I sometimes make up for parties.

JUST LIKE PUMPKIN PIE
20 dates, soaked overnight
2 C cashews, soaked overnight, and drained
2 large sweet potatoes, peeled and diced.
3 t pumpkin pie spice
drizzle agave nectar

• Drain dates; reserve soak water.
• In food processor, puree dates, sweet potatoes, and pumpkin pie spice
• Remove mixture from food processor and set aside in a bowl.
• Set mixture aside in a bowl.
• Process cashews, agave nectar, vanilla, and date soak water as needed, until smooth and creamy.
• Thoroughly mix together cashew mixture and sweet potato mix puree

This is very delicious.. even people who are not raw ask for more. It tastes just like pumpkin pie, hence the name.

Re the dehydrator: I was raw for 20 years before I got a dehydrator. I did not even know about them until 1999, when someone gave me a raw food cookbook (I started out with two cookbooks from the early 1970s which did not mention dehydrating, and I was happy with just my knife, my VitaMix for years -- of course, now I love my food processor, my Champion juicer, and my dehydrator)
