View Full Version : Lunchbox recipes?

I'm new to raw foods, and tomorrow is my first day of school where I will be eating only raw foods. I usually would bring a sandwich, but that's not the case now. What could I make for my lunch that I can bring in my lunchbag?

i would pack my lunchbox full of fruits and veggies... apple, banana, cucumber, peppers, celery, carrots... very quick and easy.
i'd also bring a nice big salad... add the dressing when you're ready to eat it.
some nuts/seeds... (even good on top of the salad too)
...and a couple good raw bars too!

You can make a sandwich but perhaps not tomorrow because it will take some time to dehydrate the food.

Make some onion bread in small pieces, then make little sandwiches with Swiss nut cheese, lettuce and tomato.

You can also hollow out a cucumber, leaving the bottom intact and fill it with some raw hummus, sprouts, or chopped vegetables.

Or just take a big salad.

Or make trail mix.

I drink my lunches, it's quick and filling. What is needed is a container, blender, referidgerator, food items and imagination. Warning, people will start asking you if you chew any of your meals! yours, Carrot Cruncher.

Left overs always make excellent lunch. If I need a lunch I pack it in a plastic container/fork. Again, just Fruit is easy and Filling. Have a RAW Day.

Wraps are good. I use a big green leaf of some sort, cabbage, romaine, collards. I blend up a nut pate, a nut cheese or guacamole and then top with veggies you like. Just keep the toppings seperate and put it together right before you eat it. Youll be a lunch pro in no time.

Hmm...guacamole sounds pretty tasty for tomorrow, but will it last for 5 hours in a lunch bag? One raw guacamole recipe said to serve as quickly as possible.

One of my fast favs is pepper strips, orange red yellow green, with some tahini. Easy and good.

Sometimes for guacamole I take all the whole ingredients, prepped and mixed in a container minus the avocado, cut the avo at lunchtime and mix up my guac right then and there and fix my sammy with it! (I love guac!) I figured out how much stuff to mix w 1 guac by trial and error. AND everyone at lunch is wishing they had your lunch instead of theirs that day!! :cool:

Avocado oxidizes quickly but adding some lemon juice or other acid and minimizing contact with air (i.e. in a wrap, sandwich, or sealed in a container) should be absolutely fine.

Fruits and veggies with raw dips are great. Personally, fruit is too hard on my teeth to eat too much of at lunch (can't brush at work and wouldn't want to) so I make that a good time for veggies.

Quickest thing I always find is just throw veggies and/or greens into a container, and lunch time at work, I'll chop them up. It works as a beautiful way to destress as well and really get in touch with my body, mind, spirit, and my food again. Not sure how this would do at school, though, unless you had cafeteria before each lunch break, as knives and sharp things are not allowed. I guess I'm sort of putting this out there for others who have access to knives?

But I'm all for the leftovers idea!!!!

I agree with you too true, I drink all my meals and use same methods as you.
