since you guys were so good about giving me sauce ideas...how about giving me your most favourite pate recipes.
i have WAAAY to many walnuts and sunflower seeds at the moment so what do you think?
what have you made thats good to dip in with raw veg chips (carrots are my favourites) ... or roll up in a lettuce leaf?
actually i like to use belgian endive to scoop up pate. its has a nice bitter edge to it.
i have made alissa's mock salmon pate and i have eaten that to death. LOL
need some other suggestions please.
thanks SO much.

I use sunflowers in my Suncheeze. I will look up the reicpe and post it. You can also sprout the sunseeds for homegrown greens. :) I use walnuts for pie crusts and MY FAV recipe-Alissa's rawvioli.

Other ideas: walnut wraps or walnut taco meat, Hummus-you can use the seeds instead of tahini, bars, soup.
Walnut Pate
3 cups Walnuts, soaked
2-3 Celery
stalks
2-3 Garlic, cloves
1 sm Onion
˝ cup Parsley
1 Tbs Lemon juice
1-2 tsp Salt
Chop ingredients & blend together.
Lemon Garlic Pate
1 ˝ cup Walnuts, soaked
1-2 Dates
2 lg Lemons, juice
3 tbs Olive Oil
5-8 Garlic, cloves
10 squirts Nama Shoyu
Refried Beans
2 cups Sunflower Seeds, soaked overnight (becomes 4 cups)
3 Tbs Nut butter (almond, tahini)
˝ cup Flax seed oil
3 tsp Cumin (key ingredient)
2 tsp Chili Powder
1 Tbs Apple Cider Vinegar
1 tsp Salt
Blend, adding a bit of water as you go along until smooth. Good w/cheese.
Try without oil+vinegar, add more spices+cayenne.
I have a few others with ingredients, but no measurements if you want them.

Thats kind of how I make my taco nut meat (I always add fresh cilantro) but I never thought to put nutritional yeast in the mix. I will definitely have to try this! :D

I actually substitute the walnuts for pumpkins seeds.. :) I forgot about that! Walnuts make me break out for some reason.. I wish they didn't though because I think the taco meat is better with them instead.

I agree that Alissa's recipe for Mock Salmon Pate is yummy. I also use another recipe called Not Tuna Pate from Jennifer Cornbleet's book "Raw Food Made Easy". The recipe is available on the web if you do a search, but here it is:
Not Tuna Pâté
Makes 2 servings
This pate is my daily staple-it's delicious, versatile, and filling. Not Tuna Pâté is the perfect way to turn a salad into a main dish. You can also serve it as a dip or use it as filling for rolls, stacks, and sandwiches. You may wish to make a larger batch, since it keeps for five days.
1/2 cup soaked raw sunflower seeds
1/4 cup soaked raw almonds
2 tablespoons water
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1 1/2 teaspoons minced celery
1 tablespoon minced onion
1 tablespoon minced fresh parsley
Place the sunflower seeds, almonds, water, lemon juice and salt into a food processor fitted with the S blade and process into a paste. Stop occasionally to scrape down the sides of the bowl with a rubber spatula. Transfer to a small mixing bowl and stir in the celery, onion, and parsley. Mix well. Stored in a sealed container in the refrigerator, Not Tuna Pâté will keep for five days.
Variation: For Not Salmon Pate, add 1/4 cup grated carrot to the food processor along with the almonds, sunflower seeds, water, lemon juice, and salt. Replace the parsley with 1 tablespoon minced fresh dill weed or 1 teaspoon dried.
Enjoy!
