i have been eating alot of squash and yam noodles lately but i would love to try a different sauce.
my usual is olive oil with some salt and pepper, garlic and nutritional yeast or i like to use walnut oil with some chopped walnuts.
i have a lovely pile of delecita squash noodles in the fridge for later.....just not sure what kind of sauce to top them with.
any different ideas?
thanx

tomatoes, garlic, some beetroot, chilli and parsley (or dill)-blend. that gives you a nice tomato sauce. You could also blend parsley, dill, garlic and some lemon,-this one tastes really salty!

Fresh yam, butternut squash noodles taste great with a squirt of fresh lemon juice and some walnut or other high quality oil. Salt is optional. This combination seems to work on the sweet & sour tastebud combination. Sweet from the squash.
