I found this and was wondering if anyone had some testimonies re: this type of item? I think it would be awesome for making yummy live kraut, pickles, etc.

Hmm interesting. Seems it would be helpful for making preserved lemons, but unnecessary. Haven't used it though.

LOL -- Preserved lemons ... You use them for garnish or just a TOUCH in a recipe to get the tanginess. I recently was trained by Chad Sarno on all sorts of good raw food info, and he showed how to use and make preserved lemons. Good stuff. It's not super complicated, but it takes a little while. I'm in the middle of doing about 17 things at the moment so don't want to tell you how from memory and be wrong... I'll be posting info on how to do it in a couple weeks though. Maybe in the meantime, someone else can share if they know without referencing their notes! LOL

I bought something similar and then was reluctant to use it because it's plastic. I never used it. Who knows what will leach out of the plastic? Now I use a Harsch crock for large batches of kimchi/sauerkraut, or I improvise with glass jars for smaller batches. Both of these methods have worked great for me.

Yes, I have one from my macrobiotic days. It works very well and you can make all types of pressed salads as well as pickles.

that's what got me thinking. I buy rawkraut and approx $5 for a small jar....

I made the same thing that this would produce by simply shredding the veggies and lightly salting each layer as I put them into a bowl and putting a weighted (half a brick covered with a ziplock bag) plate on top of it. The juice developed out of the cabbage, etc and when it got to be enough it came up over the edge of the plate I tasted it and it was delicious. For those afraid of plastic leaching (and I am) use a glass bowl and plate) Since then I have bought a Kraut jar that has the water seal in the lid and it works very well.
