Does anyone have a raw recipe for peperoncinis? My husband is looking for one.

I eat the ones right from the jar, they don't seem cooked to me. I eat them anyway.

I have to agree with spicy-altho I don't eat peppercini-per se-I do eat organic pickles. I have tried every single kind of raw pickles i can find and I can't stand any of them. Now, I've never had peppercinis but aren't they just pickled banana peppers? Frugal Raw has a recipe for making raw pickles in her book, so perhaps just substituting peppers for pickles would work?

They are a very short pepper and it has Natural wrinkles, it is light Green in color and is often sold shredded in the Jar.

This fall I got a whole lot of jalapenos very cheaply. I sliced most of them, put them in quart mason jars, and filled the jars with salt water (I would guess about a tablespoon of salt to the amount of water for 1 jar, but I can't remember). I let them sit, covered with cheese cloth, for probably 3 days. ThenI filled the jars all the way to the top with some more water, so hardly any air remained. I closed them up and they've been in my fridge ever since. Yesterday, I opened one to put jalapenos in my kimchi. They look and smell excellent, and I'm sure they taste great, too. Couldn't taste them, because I'm currently fasting. So anyway, I'm sure you can pickle any pepper or even most vegetables the same way.
