View Full Version : Raw Cacao Fudge

WOW! I made this yesterday and boy was it FANTASTIC!

1/2 c Cacao powder
1/2 c pure maple syrup
1/2 c coconut oil
1 tsp pure vanilla

Mix well in food processor or blender then put in refridge

and you can add chopped raw nuts if you like

ENJOY!!! :D

Is the pure vanilla mean vanilla extract? And, can the maple syrup be traded with Yacon syrup or something else?

And, just toss everything in a food processor and grind?

Looks great though, I definitely want to try it.

Looks great though, I definitely want to try it.

I have to agree that agave would be fine -- but yacon does work in many cases as well. It's actually a great replacement for maple syrup, but I have to add some cinnamon or some other spice to enjoy the taste (just me). I generally use vanilla bean even when a recipe calls for any type of vanilla. I'm too much of a vanilla lover!

The only time that type of substitution hasn't been successful for me (separate from vanilla) is when a recipe called for peppermint extract, and I tried fresh peppermint. Just not the same!

Wonder if dates would work for the sweetner ? Where did you get your cacao ? I've got to get some!

If you have a mexican or latin grocery or open market--I have found raw cacao beans sold by the pound there.
