View Full Version : Raw Spicy Sichuan Cabbage???

There's a restaurant here in Chicago that has the best Sichuan food and I really love the cabbage they give you when you first walk in. I really want to recreate this. Does anyone have a great idea for Sichuan sauce (chili, garlic, possibly made with raw sesame oil) that they can help me make?

Honestly, I think you just had a really great idea for Szechuan sauce!
If someone else doesn't pop up with a recipe soon, I would say just play around with the ingredients you listed 'til you get something you like. :)

Try this:

From the Asian store an amount of crushed red peppers, an equal amount of sesame seeds, about half that amount of crushed garlic, raw rice vinegar, and raw sesame oil. Mix it all together in a paste. Chop Napa cabbage, wash and lightly salt it with celtic sea salt, which will draw out moisture. Mix in the above paste.
It's basically a kimchi recipe without letting it ferment.

Emma, my husband is Korean and so I was looking for a somewhat non-kimchee type recipe, but the ingredients you listed made my tummy rumble anyway :D
