I never post recipes but was so pleased with this that I had to share it.

I did what I am going to call Fruit Lasagne.

I took the fruit leather and cut rectangles the size of the plastic container.
I put a layer in the bottom.
Then I sliced some strawberries and put some more in the processor to chop smaller and did a layer.
Then Leather
Then strawberries
then leather
then a mix of sliced and processed golden kiwi
then leather
then kiwi
then leather.
In fridge overnight.
In the morning I turned it upside down in to a larger bowl. There was too much juice came out so I added most of it to my smoothie.
I made thick cream with Macadamia and cashew nuts and poured it on top and topped off with some sliced kiwi and a sprinkle of carob powder.

It was fantastic. It tasted just like the Glazer Farm strawberry shortcake.

That is such a good idea! Sometimes I see recipes and I wonder why I didn't think of that! As soon as I saw yours I said "of course, fruit leather, chopped fruit and cashew cream." I love it!

Fruit Leather is Fruit that has been purried, spread on a sheet and dehydrated. Did you ever buy the fruit leather rolls as a child? It is the same idea only it is dehydrated and not baked.:)

Fruit Leather is a great for using up fruit that you may have too much of and it allows you to take advantage of bargains at the store. I usually use apples, mango or/and papaya.
