has anyone ever tried making a raw cheesecake without cashews? ever used walnuts or hazelnuts...or any other nut? how did it turn out?
i was hoping to make a raw cheesecake, but i haven't gotten any raw cashews yet and was hoping to use some nuts that i already have. thanks.

Do you have macadamias? They are the BEST for a raw cheesecake.

I think if you were to make a chocolate cheesecake or didn't mind that your cake wasn't white another nut would be fine. Make a small ramekin's worth and see how you liek it. What nuts/seeds do you have?

i think i will give it a try with another nut. maybe it won't be as creamy though since cashews and macadamias seem creamier than other nuts?
i have walnuts, pecans and hazelnuts. i also have sesame and sunflower seeds.

I dont' feel like those nuts would be good, but you could try it. I was thinking skinned almonds might do well.

Make sure you soak your nuts for a long time. If you soak almonds for 8 hours, the skins slip right off and the remaining nut is almost white. They also turn out creamier this way.

i tried a mix of walnuts and hazelnuts and it wasn't bad...but i wouldn't call it cheesecake. i also didn't soak the nuts so i guess it could have been creamier. but, it was good :)
Maybe pine nuts would work. They have a creamier consistency than walnuts, etc, but not as creamy as cashews or mac nuts.

I was also thinking pine nuts.....maybe chia seeds, as they get creamy when processed in the blender....
