I'm about to juice 10-12 carrots and I want to make dinner out of the pulp. I've got tons of recipes... buuuut - I just want to throw something together quickly. (don't wanna dehydrate more than 4 hours if at all) Maybe something Italian, or a pate.

I've got lemons, olive oil, dried basil, cayenne, caraway seeds, poppy seeds, dried onion, garlic, sesame seeds, pumpkin seeds, walnuts.... might run to the market for a thing or two -(but food budget is tight this week.)

any creative ideas? :)

I would try forming little orange patties! To the pulp add: ground up flax seeds (enough to make the dough thick), onions, garlic, seasonings, tahini (or ground up sesame seeds), plenty of salt/pepper, maybe some lemon juice. Taste as you add things, so you know what to add more of into your creation.

When I heard the Boutenkos speak, they prepared a meal first. Here's the Live Garden Burger they fixed. I think you can use your pulp easily with this. It makes enough for 10! But, you can easily just use this as a guideline, I'd think.

Live Garden Burger
This recipe is quite possibly the most versatile recipe.
With garden burger you cam make nori rolls, cabbage wraps,
spread it on crackres, stuff mushrooms, peppers, tomatoes, onions, cucumbers, and more.

1 pound of your favorite nuts
1 pount carrots
1 medium onion
1 T. sweetener (very ripe banana, raisins, dates, agave nectar)
1 T. oil
1 - 2 T. poultry seasoning (or other seasoning)
Sea salt to taste

Grind the nuts in a food processor.

Combine the remaining ingredients and put through a Champion juicer with the blank plate in or grind in a food processor.

If the mixture is not firm enough, add one or more of the following thickeners: dill weed, dried garlic, dried onion, dried parsley flakes, nutritional yeast, psyllium husk powder, or ground flaxseeds. Form into balls, cutlets, or filets and sprinkle with a little paprika before serving.

Note: If you want "fishburger," add seaweed (dulse, kelp, nori) to the mixture.

Serves 10
