View Full Version : Jaurequi-no bean hummus!!!!

I tried the No-bean hummus last night. It was SOOO wonderful. I can't believe how much like real hummus it tasted. My SAD-eatin-hubby liked it also...and he doesn't like anything!! I suggest everyone gives this a try. Just in case you're reading this and wondering...here's the recipe (again)
No bean hummus
2 medium zucchini
1/4 cup olive oil
4-8 garlic cloves
2 tsp celtic salt (or use dulse flakes)
1/2 cup lemon or lime juice (I used alittle of both)
3/4 cup sesame seeds
3/4 cup tahini (I only used about 1/2 cup)
1/4 cayenne
1 tsp paprika
1 tsp ground cumin
Process zucchini, olive oil, and garlic first in processor. Add remaining ingredients and process until smooth.
Yes it IS YUMMY!

looks good, but i think all that raw garlic would make me sick, lol! i can barely tolerate 1 raw clove in regular hummus!

Oooh! I can't wait until I go grocery shopping again to try this!!! I LOVE garlic, it's one of the 4 food groups. Let's see, garlic, berries, bananas, spinach. Yep, that's 4!

If you like the way it sounds (just without the garlic) make it your way. I have spent my life changing recipes. Don't know if I could stick to one without making changes. Always I look at something and think 'Oh, that sounds good ... maybe without this and that, and maybe such and such instead of that, and add something else." It turns out completely different but mine, just right.

Lol, I love garlic too, shannoncolleen. I use two cloves in my dressings for one serving!
Starry-eyed-Doe, you could use just a pinch of garlic, or even a pinch of garlic powder/granulated, which might be more mild.
Doe, I love to adjust recipes too; I think most people tweak them to taste. I usually try to make them first according to the recipe (unless I'm veganizing something), then see if it needs adjusting.
I think I'd like to try adding red bell peppers to this; I used to love roasted red bell pepper hoummus.

You know, I bet this recipe would also be FABULOUS with some red peppers in it! I know this will be a staple in my refrigerator! :D

i will try it with the garlic powder :) the only thing is, i know how good raw garlic is for you and i wish wish wish i liked it but it is just sooooooo potent! :eek: on my previous SAD diet i loved roasted garlic, it has a completely different taste, but is also void of all nutritional content... :( how can i find a way to make myself like it?
i tried adding it to a smoothie to hide the flavor, but it made me nauseous!

This sounds so good! I said I'd try it two months ago, and I still haven't. I don't know why I'm hesitating. Maybe I don't believe it'll really be as good as everyone says? And here I've been craving hummus.
I'm going to try this. :D

I don't think it's something you should force down. If your body needed it, I think you'd crave it. In fact, there are some who think it's not that great and that people probably shouldn't be eating it.

Mmmm, red pepper hoummus!
Doe, I know what you mean about the garlic. I've lost my cravings for certain foods I previously couldn't get enough. I've read some raw foodists don't think that we should consume anything that can't be consumed on its own as a meal. I don't follow that line of reasoning, myself.
How interesting that you lost the craving for something so small as an herb.
I eat much more simply, but still need lots of flavor in my dressings.
starry-eyed-doe, I don't think you have to like garlic. It's used mostly as a flavor enhancer; not to overwhelm a dish. If even teeny-tiny amounts bother you, just leave it out or use onions.
You could also try shallots in place of garlic; it's a flavor described as a cross between onions and garlic.
Have you tried elephant garlic? some prefer it. It is much milder and sweeter than regular garlic. They are giant garlic bulbs.
Another option is asafoetida: it is often used to replace garlic by those avoiding it for reasons of faith or taste. But it stands as its own flavor too, and is common in Indian recipes. BUT, I must warn you, if you've never used it before it is *very* potent! So literally sprinkle a few grains onto a dish! I like it; but it can get nauseating very quickly :).
Hmmm...on hoummus, it might be interesting. I don't know :)
