Can anyone tell me about the Almond butter balls in Alissa's recipe book, should they go in the fridge once you make them up. I've just made a big batch up and even though I'm sure there wont be any left by this time tomorrow I'm wondering if they would keep better in the fridge?

Yes, they need to stay in fridge. Almond butter should be in fridge too.

Just a warning in case you're not already aware. Almost all almonds from USA must be pasteurized/sprayed with cancer causing chemicals "for our safety". Premade almond butter is also unintentionally cooked during processing even if it was made from truely raw almonds to start with (but it's made from the pasteurized ones). I'd highly recommend making your own almond butter with almonds from Spain or Italy.

Thanks for the advice Raweater but I'm from New Zealand and they are straight of an organic tree. I do tend to like it made with Cashew nuts which may be a problem as I've heard they are really hard to get raw, I've been buying organic unroasted Cashew nuts but I'm a bit concerned they are not the real deal.

Wow. I just made these!!! They are way too good. I could almost pretend the raisins were chocolate chips.
