OK so... since i have discovered my lemon zester makes unbelieveable butternut squash noodles....i thought i would share with you the simple topping i made for them.
i have always loved walnut sauce but i was in a hurry to get to my GIANTIC bowl of noodles and didnt feel like messing with the food processor to do it.
SO... i combined in a small bowl..... my favourite buttery extra virgin olive oil,
a touch of raw garlic( you could use a touch of garlic powder if you wanted instead) some course ground black pepper and some chopped walnuts that i just broke into small pieces with my fingers.
just mixed it all up together and poured it on my noodles and it was really tasty.
the play of the crunchy walnuts against the noodles and the spicy bite of the black pepper with the buttery olive oil ... total YUM!
quick and easy.
there are no measurements here its all to your individual taste.
i will caution you though about the garlic..... if you add too much it will take over so just add a teeny tiny bit at a time time till it tastes right to you.
i added it after i added the olive oil and the black pepper.... the walnuts came last.
gee ....just talking about this now is making me want to get out the zester for another round of noodles. LOL
what a great way to eat pasta with no worry about eating anything bad for you
now i have to think about what else i can shred...... maybe those parsnips i have in the fridge are gonna be next.
