View Full Version : Banana Nut 'Pan' Cakes

I can't remember who posted the recipe for the banana nut 'pan' cakes and I can't find that post, I'm still trying to figure out how this site works..
I do remember that it was someone wondering what to do for Christmas morning. I've also been wondering the same thing .. I've got the recipe right now in the dehydrator for my boyfriend to test out tomorrow :D

Here's the original recipe:
Banana Nut "Pan" Cakes by Maraw

1c. brazil Nuts
1c. Pecans
4 lg Bananas
1/2c. Almond milk
1 date, pitted, soft or softened
1/4t. Cinnamon
1/4t. Nutmeg
1/2t. Salt

Wizz all in FP till very smooth. Pour onto Teflex sheets into rounds of 1/4-3/8". Allow to dehydrate 9hrs/115 degrees. Flp onto screen continue to dehydrate 2-3 hrs.

I did change it a bit. I have two full trays with different recipes.
1st recipe: 1/2C brazil nut, 1/2C pecans, 3 very ripe bananas, 1/2of1/2C almond milk, 2 dates, sprinkle of cinnamon.
2nd recipe: 1/2C walnut, 1/2C almonds, 3 very ripe bananas, 1/2of1/2C almond milk, 2 dates, sprinkle of cinnamon.

I'll let everyone know how they turn out!

I also have almond meal left from making the milk.. anyone have any recipes using almond meal?
I did try the lemon blueberry scones to use up some almond meal.. unfortunately they just weren't anywhere near as good as real scones.. :(

Blend up some dates with water, add to the almond meal, spread on a teflex sheet, and dehydrate. Mmmmmmm! Crispy cookies! Blend some peppermint and carob with the dates and water, and you've got crispy mint carob cookies! Like the little mint choc-covered wafers you get in the giant jars.

These are very good and freeze well. I usually make a double batch and freeze them and then pull 'em out of the freezer when I want to eat them. They thaw quickly and do not get mushy.

I would make macaroons with that almond meal/flour! Do you have "Raw Food Real World"? There is an incredible macaroon recipe using almond meal/flour in it. Good luck!

No I don't have the "Raw Food Real World". Would you mind sharing the recipe if the recipe is some what simple..? :D

My boyfriend tried both the 'pan' cake recipes and didn't like the original one with brazil nuts and pecans but didn't think the walnut, almond one was worth making for Christmas morning. It was alright but thought the plain banana crepes were waaayyy better. He had chopped up strawberries with a honey date sauce on both 'pan' cakes..

RawSar, would you recheck that size? 1/4-3/8" does not sound right. That would be a drop at a time.

I think she means thickness of 1/4-3/8 inch!

I just copied and pasted the recipe from where I got it from. I'm pretty sure it means thickness as well. I, however just made one big sheet of it, didn't do any circles or shape of any kind and then used a cookie cutter when it was finished dehydrating, and made a few long strips of it for a wrap style 'pan' cake/crepe. :)
