tonight i wanted something different for dinner so when i was at whole foods i picked up a package of kelp noodles.
when i got home i peeled a carrot ..then peeled strips off it like pasta and mixed them with the kelp noodles.
i noticed i had half a left over lime and i combined that with some peanut sauce i had made from my wild jungle peanuts.
i also added to the sauce some asian pepper sauce ( not raw but i dont mind using some condiments since its just bits of stuff)
AND! a dash ( JUST a dash ) of vietnamese fish sauce to bump up the flavour.
yes... i know... not raw and not vegan but WOW what a seasoning it is !
i mixed it all up and then poured it over the kelp noodles and carrot strips.
then i sprinkled more jungle peanuts on top.
wow it was delecious !
i happen to like vietnamese food and it reminded me of noodle dishes i have eaten in the past.
yes the kelp noodles are a bit crunchy and the carrot strips are also a bit crunchy but they go so well with the peanuts and the sauce.
i am definitely making this again.
easy and tasty.
