Hi, I'm a newbie and finding time management difficult... after I soak my nuts or grains how long can they stay good before I use them in a recipe? I have both nuts and grains I soaked 7 days ago in the fridge and I'm afraid I can't use them anymore. Can they be frozen after soaking? Also, are the recipe measurements, especially for grains, after being soaked?

Soaking time is usually a few hours or over Night. Why do you have to Soak so much in advance? Soaking is only to soften the Nut or Seed to make it Palatable or to start the Sprouting process.

Thanks for you reply- what happened is I soaked the nuts/grains to prepare some recipes but I didn't get time to do it because of my work schedule. I soaked them for the correct amount of time and then I rinsed and drained them and put the jars back in the fridge. It was a week before I could get back to them. I work 13 hour days and this is the problem I've had with raw fooding... that is why I'm wondering if I could soak/rinse/drain and then put them back in the fridge for a few days before making my recipe. I just want to know how long before it will lose it's value or go bad? I'd really appreciate any suggestions. Thanks!

I'm not exactly sure on the time they will be bad but the smell and taste will certainly tell you if they are good. If raw food is taking you a long time in preparation, then go more simple. Raw food doesn't have to be gourment or mimic a SAD diet. Eat a bunch of fruit with some nuts for breakfast....whip up a large green smoothie to take to work and put some dressing in the bottom of a tupperware type container and build a large salad on it for later that day (sounds like you work through dinner - putting the dressing on the bottom and mixing it in later makes the greens not wilt). Then you could take some more nuts or dried fruits to snack on. Good luck!!!
