Has anyone tried freezing young coconut meat?
How long do you think it could be frozen if kept in an airtight container?

I normally use my foodsaver to freeze things - it will last several months like that. I also freeze the milk .

I use one of those ziploc bags that you can suck the air out of, kinda like a foodsaver. When there is no air in the bag, it keeps longer without freezer burn. Sometimes, I blend the meat and the water (coconut milk) and freeze it that way for recipes.

I have kept mine frozen for several months (3 months) and then just recently used it in a recipe and it tasted just perfect. You could probably go even longer

I also freeze mine. I use small plastic containers overnight to freeze. Then I pop them out and Food Save the frozen 'discs' (I do the same for mangoes and pineapple after processing in my food processor). I use them in my green smoothies. *Ü*
