View Full Version : Any recipes for traditional-like antipasto ... ?

I've been looking and looking but haven't found anything raw vegan, not even questions about <g>.

Although antipasto (Italian hors d'ouevres, or "before meal" finger foods) can mean any pre-dinner snack-like foods, it's always meant marinated vegetables of a certain kind and flavour and texture, i.e., mushrooms, pickled vegetables (olives, artichoke hearts, etc.). Was hoping to come up with something raw for Xmas as for the first time, I'm hosting a Xmas dinner (not just 1, mind you, but 2!!). Antipasto would be a great hit.

-you can get raw olives that taste same as cooked ones,
-also, mushrooms you can do easily raw: marinate in olive oil, nama shoyu or tamari, lime juice and whatever other seasonings you want--herbs, garlic, etc,. the longer they marinate, the softer they will become, even to a texture that seems very much like the antipasti texture to me

Marinate all sorts of peppers, sweet & hot by placing in a jar with clove of garlic, evoo, herbs of your choice...even a green olive or two....cover and let flavors marry...I keep in fridge and just turn jar over every 12 hours or so till I like the flavor.

Do the same with cauli/zuke/etc. using different herbs...

Raw olives...

Marinate kalamata olives in lemon juice, oregano, evoo for a greek flavor...

Sundried tomatos soaked in evoo and on a marinated shroom....

Hmmmm..I think I'll do up a platter for the holidays !

Great ideas! I mean, the olives and mushrooms are ones that we've all probably been doing for a while but the others? I didn't think of peppers, and cauliflower and zucchini would never have occurred to me <g>. Gotta try those! Hmm, sundried tomatoes, too.

My uncle loves antipasto. Neat to know that I just might have a healthier alternative for him. Best thing is that I must do all sorts of testing beforehand <mmmmm>!
