Does anyone else do this? I chop up a vanilla bean really fine (can be done in a coffee grinder) then I put the chopped up vanilla bean in a cup of honey and let it steep for a week. Then I strain the honey and I have vanilla flavored honey. It is so delicious in smoothies and dessert recipes, or even dissolved into some naturally sparkling mineral water (tastes like cream soda).

That sound faabuulous! I used the inside of a vanilla bean the other day in a recipe and absolutely hated the thought of throwing the outer part away, because I hate wasting anything. In the past, I would have put it in sugar to flavor the sugar (what a thought now:eek:) so, the honey sounds like a plan for scraped vanilla beans THANKS!

What a good idea Rawstrength! For me I'd sub the honey for a vegan sweetener.
I too think 'what a waste' after I've gathered the seeds from a vanilla pod. I generally place the chopped leftover outside of a pod into some walnut oil, which lends itself to a sweet flavour like vanilla. Then use the oil in sweet recipes.
In a couple of weeks time we are off to our favourite holiday destination and will be collecting a year's supply of natural sparkling mineral water (we've run out ... :(), so I'll try the 'cream soda' idea, brilliant!
