What to do with left over stuffing from pesto mushrooms

I made the Pesto stuffed mushrooms, but had extra stuffing. What else could I use this for?

I have never made it but Mushrooms can make some Tasty dishes. How did you like the Stuffing and would you make it again?

Pesto pasta -- if you have a spiral slicer or mandoline, you could just make the pasta out of zucchini. If you don't you could just slice it into thin pieces. Add a touch of olive oil to the mix if necessary, top with diced red peppers. Mmmm. :)

you could mix it with a binder - ground flax or sprouts - and make crackers out of it....i actually had a bunch of leftovers from thanksgiving and made some nice breads and crackers out of them.

I love the pesto stuffed mushrooms. I have actually freezed the leftover pesto to use another day for the more mushrooms.

Put it into a lettuce 'wrap' like a burrito with diced veges and olives on it. Yummy! :) I love wraps - you just can't screw them up! :rolleyes:
