I did the first time I tried them, after that I sliced them with a veggie peeler super thin and pressed them between cheesecloth to remove the moisture, they dehydrated in no time and were crunchy!

good luck!

*scratches head* I never have had a problem! I marinate them in some vinegar a few seconds before moving to the dehydrator so they stay white, but otherwise...? Are you slicing them thin enough? Maybe sprinkle a *wee* bit o'salt over them?

Maybe they are not thin enough? I did mine with a potato peeler since I didn't have any other way to make them thin. They were however, very nasty tasting each time I tried making them and they wound up in the trash.

mine were not super thin but you would think that after 4 days dehydrating they would be crispy. LOL
i couldnt leave them in any longer because i had to make my raw buckwheat granola. i will try putting them back in there again after the granola is done.
but i like the idea of using a veg peeler.... THAT would probablly do it !
i'll try that next time.

oh.... and i LOVE the taste of bacon..... i happen to run accross bacon flavoured salt so i have THAT sprinkled on there.
i know, i know..... i cant help it. i REALLY miss bacon. LOL

thanks for the suggestions.

There is an eggplant bacon recipe on this site that is really good. We have such high humidity here it is hard to get it crisp, however when it does!!!!! My son the bacon lover said he never would have known it was eggplant if I hadn't told him. :D
