in the recipe for pumpkin pie from Purely Delicious that EPPP posted, it calls for soaking the dates beforehand. I've never done this before - is it an overnight thing, of just an hour or two? Also, do you then use the water, too, or just the plumped up dates?
Thanks!

curly girl,

I use warm water (not hot) and soak them for about 20 minutes. Essentially, it softens them up and makes it easier to blend them smoothly. :) Can't wait to hear about your pumpkin pie!! :)

Hi CG -

I usually soak them for about 8 hours, depending on how dry they are and the air temp. If they are really dry, I will keep them out of the fridge.
