Makes a delicious raw pasta, and it's in season now (in Connecticut). Try it and you'll see! If it is a particularly large and woody celeriac, you may want to marinate it first to soften it a bit.

My very first raw meal I ate at the Grateful Cafe in Berkeley, was a dish they made that had celeriac as a pasta. It was really good.... too bad that I can't remember what the name of the dish was. I have eaten there several times since, and I think they switch vegetables around for their recipes, depending on what is in season. I really liked the celeriac because it was pretty crunchy. I'm glad you mentioned it, because lately I have been using zucchini.....I had forgotten that the celeriac made a good pasta!!!

Yes it is! I had it at a veggie place downtown and it was super delicious! Very light and satisfying..
