Hi,
Does any one have info on if Raw Green beans are toxic? I had someone tell me that recently and just wanted some facts. I have been eating them raw for a while with no issues, but when I googled for more info I actually got some hits on that. Any one know the facts? Any input would be greatly appreciated.

i started gardening 15 years ago , and at that time reading tons of gardening info . and also starting then growing tons of varying variety of green beans .
and ive never read that said once , and ive always ate tons of raw green beans out of my garden . so ide bet tons :D of money they arent toxic .
and if youve never seen them heres my faves =
- dragon tongue bean , its flat - yellow with purple streaks and delish raw
- royalty purple pod bean , its purple but taste like regular green bean but more succulent
- and the best regular green bean ive ever ate is kentucky wonder pole bean , its a big pole type (grows tall as opposed to a short bushy type plant)
thats been famous for like a century

All I can say is.....I've been picking them right there in my garden and eating them.....I'm still kicking and have never gotten sick. I remember my mother saying something about when you bottle fresh green beans, that you have to be careful to process them for the right amount of time and then when you open them you have to also cook them to not only heat them but so you won't get botcholism (sorry about the spelling - just did it phonetically).

Not toxic, but some are better tasting raw than others. Haricot Verts are the best raw, IMO.

never had a problem eating them raw when i was younger so i never thought about it....and just bought some today, ironically, to venture into my first raw green bean casserole, complete with mushrooms and crispy caramelized onions on top.

Im making the recipe that I found on this site from I believe samuelwilson
here it is:
the only difference is that Im making some of the onion bread from rawvolution and letting it get really dehydrated and crunchy and then sprinkling/crumbling them in the recipe and on top..kind of like the green bean recipe from years ago at my moms house,lol

Green Bean Casserole
1 recipe Alissa's Mushroom Soup
1 1/2 lb. fresh green beans
2/3 cup onions, diced
1 teaspoon Bragg Liquid Aminos
1 1/3 cups recipe Alissa's Marinated Onions
Sea salt and pepper to taste
Mix all the ingredients, accept the recipe Alissa's Marinated Onions which you will sprinkle on top after mixing the other ingredients. Dehydrate for 5-6 hours to allow flavors to intertwine.
IMPORTANT: Feel free to alter the amount of green beans and diced onions as my amounts may be off.

The person who told you they were toxic wasn't perhaps German? It's a widespread "truth" there, and my German friends always panic when they see me eat raw green beans! ;)

That's funny. I'm German, born and raised in Germany. Never heard that one, plus have always eaten them raw. Would be dead, if it was true.

...what people will say in order to promote a bogus idea, isn't it? Raw green beans toxic? Perhaps laden with pesticides they may be.
Any time I read an "expert" opinion on the implied negative consequences of eating fresh and raw organic fruits and vegetables, I just laugh and laugh. If we sat and put just a scoge of thought into the idea, we can't help but to see how ludicrous it is.
I wonder how big the backlash would be if someone just suddenly posted on the internet that McDonald's french fries were toxic and could kill you? Of course there would be an uproar; and yet there's more than an ounce of truth to it.
