so i am really jonesing for a good carrot/ginger dressing. most recipes i have found "in the real world" require peanut oil or something non-nutritious like that. i am looking for the kind of dressing you normally find used in Japanese restaurants on iceberg lettuce.

1/2 lb carrots (3 medium), coarsely chopped
1/4 cup chopped peeled fresh ginger
1/4 cup chopped shallots
1/4 cup raw apple cider vinegar
1 tablespoon raw tamari, miso or nama shoyu
1/4 cup sesame seeds
1/8 teaspoon salt
1/2 cup olive oil or unrefined sesame oil
1/4 cup water

Blend all ingredients until smooth.

Alissa's ginger vinegarette is incredible and it does have a wonderful Asian taste to it, no peanut oil and I really don't know why she calls it a vinegarette because it doesn't have vinegar in it.
