View Full Version : Sour Cherry Tart - recipe wanted

Please, please can you help. I just enjoyed the most delicious Cherry Vanilla ice cream I clal it but it was Matthew, Real World recipe without the crust made into an ice cream. It called for or he used almond extract. It was a fabulous ice cream. I would love, love this recipe as I don't own this book yet. Can anyone please give credit to Matthew, the book name and the recipe? I don't care about the crust, but someone may. I'm interested in it staying in the freezer and then coming out.

This guy had a separate plate of thawed out frozen cherries. Let me tell you if you think you tasted the best ice creams, wait till you taste this one. He used a Vita Mix and had to put a little in each time. I remember it had fresh baby coconut, coconut oil, cashews, almond extract and maybe another ingredient.

Can you please come to the rescue? Thanks. Off to bed and now waiting to wake up to a surprise--the recipe. I do have lots of cardio I need to do after tonight's rawluck which was fabulous. We have lots of people show each time. New people love it too.

Here's the recipe from EVERYDAY RAW by Matthew Kenney

CHERRY CHIP ICE CREAM

Ingrdts:

1 cup cashews, soaked 1-2 hours
1/2 cup young coconut meat
1/2 cup agave
1 1/4 cups water
1/4 cup vanilla bean, scraped
pinch sea salt
1/2 cup coconut oil
1/2 cup + 2 Tbs frozen cherries, thawed and chopped
1/2 cup Chocolate pieces

Blend all ingredients except 2 T chopped cherries and Chocolate Pieces in Vita Mix until very smooth. Stir in reserved cherries and Chocolate pieces. Pour into ice cream maker and follow manufacturer's instructions.

Recipe for Chocolate Pieces

2 cups coconut oil, melted
6 cups cocoa powder
1 3/4 cup maple syrup

Place all ingredients in a bowl. Thoroughly mix. Spread thin layer on parchment lined half sheet pan. Chill in freezer until firm and break into small pieces. Store containers in freezer. Store extra chocolate oil in containers in refrigerator.

Just bought this book and it looks like it has some fabulous recipes. I haven't really tried them yet, but look forward to doing so. Enjoy, enjoy, enjoy :D

Forgot to say in earlier post, for those of you who have a Trader Joes nearby, I know they have frozen cherries in the freezer section of the store.

Carolg, did the person that made this for you just use a vita-mix and no ice cream maker? I have a vita-mix, but I don't have an ice cream maker, so it would be great to do it that way if I can.

This firms up very well so no need for the ice cream maker. However an Ice cream maker does add air to help lighten it up. I personally was not crazy for this one even though I added double the cherries called for! Just very little cherry flavour! (Love his new book, highly recommend it!)

His Mint chip ice cream however was to die for!!!

Absolutely love mint, so will try that ice cream recipe out. As for the cherry ice cream, I wonder if you could juice some of the cherries, and substitute some of it for the liquid ingredients ~~might add more cherry flavor. When I was living in San Jose, CA area, there was a place called the Cherry Orchard and they sold a bottle of 100% pure cherry concentrate. It had nothing else in it. I still have some of it in the bottle, however I think it might be pasteurized, I'm not sure. They had it in the refrigerated section of the store. It was by a company called Benjamin Twiggs and they had a website www.benjamintwiggs.com. Don't know if they still exist or not, but maybe I will look into it and see if it is raw.

Yes I actually did that. I just didnt want to get to involved in what I did. I pureed 1c. of cherries plus added another 1c. chopped AND added cherry flavour and it still tasted of cashews and coconut.:(

I have however put in an order for cherry juice tat is used in the Cherry Garcia recipes here from way back. When I get that I will give it another go. The cherries I used were from TJ's.

It sounds like you have a good resorce down there so I would suggest getting it for this recipe.

Thanks eppp. Will look into the links you sent. It does sound like a lot of work just to get a cherry flavor, but when I make the ice cream, will try the cherry concentrate I have and see if it works out.

Thanks, thanks and more thanks! He did use Vita Mix. He did it a little at a time however.

You RAWK and thanks so much for making my day. He did use ALMOND extract which I didn't see in the recipe. He didn't mention maple syrup and think not. No mention of Vanilla bean in his recipe either. I can try giving him a call however probably tomorrow to verify. He's not great online picking up messages. I will verify but in the meantime, maybe we can have testers try it out. I don't have Vita Mix so it's me and my heavy duty blender however, part of Bosch bread making days that I would use when I get home. My daughter has a cheapie so we can do a little at a time to start.

At our rawluck at least 35 people were there and ALL ranted and raved about this cherry ice cream. It was to DIE for. There wasn't anyone expressing any doubts this was the best.

It was made in Vita Mix and he broke down the recipe doing a little at a time.

He did NOT use ice cream maker, but stuck it in freezer once done in glass bowl.

Even when we were getting to eat it from the glass bowl, we used a spoon to dig out the solid ice cream. We then topped with the cherries he harvested.

It was like cherry vanilla ice cream. It was to me UNbelievable.

I will have to look into the mint one, but right now I am hooked on RAW Sour Cherry Tart (minus making the tart we are talking).

Tomorrow we leave for TX so may not see another post till I get there.

I will try checking back to this thread.

After eating about 9,000 calories at our rawluck with tons of raw chocolate, pecan pies, the ice cream I am taking a break from foods today including nuts. No kidding it's about light things today only. Gotta get to do workout tonight, finish it up before the plane ride tomorrow early noon to Dallas area (Arlington, TX). Traveling super light weight with clothes too. This will be a first! Give me 24 Hour Fitness and I'm happy...a gym.....of course working out there too. Can't live without my workouts....at leeast 5x weekly.

Carolg, you are welcome. I don't know if you noticed it or not, but the part of the recipe that had the maple syrup was for the chocolate bits sprinkled on top. Your friend may not have done the chocolate bits. Also, I thought you mentioned vanilla extract (maybe not, I would have to go back and read your first post), but Matthew asked for vanilla bean instead.... anyway, hope this is the same recipe.
