View Full Version : Amazing Mashed Potatoes!!!

I tried to make mashed potatoes a few years ago with cauliflower and they were barely edible. However, at a raw Thanksgiving potluck I enjoyed the most amazing potatoes, made out of jicama! I highly recommend this recipe, especially warmed in the dehydrator. Here it is:

Rosemary-Garlic Mashed Potatoes

4 cups peeled and chopped jicama
2 cups cashews, soaked 1-2 hours
1 t salt
1-2 t chopped fresh rosemary
1 t minced garlic
2 t nutritional yeast
Black Pepper to taste

Process jicama in food processor until grain-like consistency is reached. Press out excess liquid with a cheesecloth or through a sieve. Blend with remaining ingredients until well combined. Warm in dehydrator until ready to serve.

You will not be disappointed...these are amazing!! (But sooo filling like potatoes...beware!) It's so different now to eat such filling starchy foods. Potatoes (or jicama) have become a rich and heavy dessert...

hope im not hijacking thread , sorry if detracting :o

but didnt think it'd hurt if i posted in this thread that
neither jicama nor cauliflower do the job of getting near
mashy giblets :eek::p (i dont know what that was there ,
i guess its baby/golf talk for mashed potatoes :p) .
so im wondering if theres an other replacement idea's .

like maybe soaked barley blended up with something ?

Oh but you're wrong...these that my friend made from this recipe were EXACTLY mashed potato textured. Thanks to her Vitamix.

BTW, I know what you are saying...I've yet to have sweet potatoes raw and mashed that are the same yummy creamy cooked texture.

But for mashed potatoes, these are creamy and delicious!

BTW, I know what you are saying...I've yet to have sweet potatoes raw and mashed that are the same yummy creamy cooked texture.

ok thanx , im trying them then . i admit i only tried jicama once because my local sources seem to be lame in quality and too high in price so i kinda ejected the jicama option from my list .

You're right about that one...it's SO pricey! For conventional they are $3.75 each here! Ouch. I LOVE Alissa's jicama potato salad recipe though...that's another good one.

You may want to try an oriental market for jicama. Mine sells it for 4lbs/$1.00.

I tried making potato chips once. They turned out horrible, but... At one point in the dehydrating process, they were warm and soft and tasted just like mashed potatoes. Now it would be difficult to plan the time frame of these so you could eat them at a meal, but you could perhaps try with a small potato, checking every 15 minutes or so after the first couple of hours to get a time frame.

never tried this but once saw people rave about dehy chips that they dipped / soaked in applecidervinegar before dehying .

i think i saw it at goneraw , but dont think gone raws currently up .

Made these yesterday and they were just scrumptious! My mom who eats SAD was shocked that raw food could be so filling. These are just soooo rich :)

Made these for Thanksgiving, and everybody RAVED. Great with some of Alissa's mushroom gravy on top! Wow!

I don't use nutritional yeast or cashews. Any recommendations for substitutes?

No...my health food store said they aren't able to get organic ones :(

What??? I can't imagine not liking them! Do you think maybe something went wrong? Did you squeeze all the water out of the jicama before blending?

Sorry you didn't like them...I could just eat them every day forever.

I understand that there are actually two types of jicama--one more watery and one starchy like a potato. Assuming the one for this recipe is the more starchy variety. Am definately going to make this recipe and use Alissa's gravy.

Ooh yum mashed potatoes... I don't have a dehydrator..what would the protocol be for the oven? Has anyone tried or have any suggestions?
