I'm trying to find a curry waldorf salad recipe but can't seem to find one anywhere! Can someone please help? I promised to make it for a non-raw friend who's been raving about a "curry waldorf salad with chicken". I'm hoping to knock his socks off with my raw vegan version and convert him. ;)

I make the mayo recipe making sure it is a little on the sweeter side and put in pecans, raisins or grapes (depends what I have/crave), lots of apples, celery. Maybe just add the curry powder to that and taste (could do a small sample amt just to see how it tastes before you put it in the whole batch, just in case).

Good luck--hope you WOW your friend.

Thanks Lady Green,

What mayo recipe are you using? For the waldrof salad,do you use pecans instead of the walnuts, or both?
