I haven't eaten rice or cous-cous since being raw, but I want to eat a grain so badly. I horrible in sprouting. Food always spoil on me when sprouting.
Is there a grain to substitute rice, that I can soak in water overnight, and in the morning it will be soft and chewable? Or soak in the morning and when I return home, again be chewable?
You could try buckwheat, possibly even millet (though millet doesn't feel like rice). I'd recommend sprouting though but I've eaten them just soaked, too - feels OK as long as I don't eat large amounts and/or often. I usually make porridge of them (blend in a blender, add a bit of fruit/berries/nuts).

I like grains too. If you're going to have them you'll have to either make them into a drink, like rice-milk, or sprout them. And done properly sprouting takes less time, environmental energy, and cleanup then cooking.
If your sprouts aren't coming out right perhaps you're not using a decent crop or you've overlooked one small thing?

Barley. HULLED barley, NOT pearled barley. you will have to soak it overnight and may have to sprout it a day or two. when i sprouted it a day or two it was the texture of rice when i put it in a warm soup. it might be soft enough after just soaking overnight; im not sure, youll have to try it and see

Buckwheat can be soaked for 45 minutes and then rinsed and eaten. I love it.

SekhemNefer, what are feelings about grains? My personal belief is grains are toxic to the body over time. I've had a chance to experience the reality of this in the year I've been a raw foodist. I had a lot of scar tissue in one of my knees after breaking it and having numerous reconstructive surgeries. I couldn't bend it for 2 years. After I went raw I noticed a significant improvement in my knee mobility about 4 months into eating 100% raw foods and juicing. The pain was gone and I was able to say goodbye to my physical therapist! :) Side note: water fasting helped with this as well.
So what's my point & what's this got to do with grains you're probably wondering?
Two weeks ago I had some wild rice that a friend made and it was all organic ingredients. I had about 3 spoonfuls of it. The day after I woke up with a headache, foggy brain, gunk in my eyes and I couldn't move my knee. It was stiff as a board! It was the rice. My body treats grains as toxins now and I know first hand it's not good for our joints. Perhaps this food reacts differently in individual bodies, but I just wanted to share my experience.
I used to be hooked on cooked brown rice, quinoa and many other grains when I was a vegetarian. I ate them daily. It is possible to move beyond the cooked food addiction. I don't crave this food anymore.
I think sprouted grains are a wonderful alternative. That said, I too tend to not eat them that much anymore as I don't feel as good as when I eat lots of greens and other raw foods.
It's always a personal choice of course. Best wishes as you transition.

I take "mueslix" for lunch at least a couple times a week to school, I mix oat groats, buckwheat, and sunflower seeds the night before in a bowl and add water and a little apple cider vinegar, leave out all night, then in the morning I just get up and rinse them well and blend them just a little bit with some bananas, berries, and sometimes nuts if i have some soaked ones lying around. Cinnamon, a little agave, dates, etc... are good to add if you like it a little sweeter. And I don't blend it into mush, just enough to make it easier to digest, then I pour some almond milk over it, stick it in my fridge when I get into my lab, and voila, delicious, heavy, filling lunch for the day!
