View Full Version : Curry Carrot Soup

This is from the vitamix site. I made it today, and the curry really rocks it!

6 carrots, cut into chunks
2 cups vegetable stock (not sure what you could do to make this raw. I used 2 cups purified water and added vegetable flavored base)
1 small onion
1/2 c soymilk (I used almond milk)
2 tsp curry powder

Place all ingredients in order listed into Vitamix. Start on one, blend up to 10, then high, until fully blended. (Original recipe says to blend until steam comes out of top of container).

I would be interested to see how that would taste with shallots instead of onions. That sounds like a delicious recipe, though. I'll try it out later this week.

Sounds good. I'm going to try it. What about some celery juice instead of vegetable stock? It might be good with a spoonful of almond butter or pine nuts, too.

You could probably also use the no-chicken broth, which is made out of yeast, in place of vegetable stock. Not sure about this, though. Will have to experiment further.

The stock I used is the kind that is gel like and comes in a jar. No chicken, no beef, just vegetables.

How about a miso with some tamari and water for the stock. That would keep it a lot more raw. Recipe does sound really good. Love the VitaMix demos; love my VitaMix, too.
