OK, this may seem like the most nebulous of recipes, but you did say you wanted to play! I'm making granola tonight. Looks like this so far:

2 dry cups of buckwheat, soaked, sprouted just a bit
1 dry cup sunflower seeds, soaked overnight
1 dry cup pumpkin seeds, soaked overnight

2 small apples
1/2 cup-ish OJ
5 large medjool dates

Soaking the dates in the OJ, then will process those with the apples to create a slurry. Maybe will need some agave???

Process Buckwheat slightly, remove to bowl. Add seeds, unprocessed

Stir apple/date/OJ mixture into the buckwheat/seeds mixture.

That's where I am at the moment. Thinking I'm going to add some raisins, probably some cinammon/nutmeg/cloves for an orange-spice kind of flavor. Might add vanilla. Might add some coconut butter. Suppose it might need agave, but I'd like to do it without (so darn pricey, agave is!). Tasting as I go. A little salt helps balance the flavors, too.

My idea this time is to form it into bars on the dehydrator screens. That way, I can break one or two up for a bowl of cereal, or enjoy a granola bar on the go.

***So I ended up with 8 total dates, juice of 3 small oranges, zest from one small orange, between 1/4 and 1/3 cup agave, 3/4 cup raisins, 1 cup almonds roughly chopped. If I'd'a had 'em, I would've added chopped dried apricots and chopped prunes, but not too much dried fruit in the fridge tonight.

Have fun with your processor--what a thoughtful gift from your BF!

A man who will buy you more kitchen toys is DEFINITELY a keeper.

Experiment with raw cookies and raw pies!

Blend 1 cup dates
1 cup almonds
1 tsp cinnamon

Press into pie pan or roll into cookie shapes and dehydrate :)

Or don't dehydrate. Alissa has a Walnut Fudge recipe in her book that uses walnuts instead of dates. And good luck. The first time I made the Walnut Fudge I ate most of it. Yes, I admit I made a pig of myself. I kept up the self-talk, "But it's good for me!") The second time I was able to exercise some self control. I LOVE having these in the fridge for when I "need" something. Sometimes the carrot sticks or cuke slices just aren't what I want at the moment!
