I learned about date paste in one of the raw book I read. Here is some of what it said: For desserts, we tend to use date aste rather than whole dates, which can be different sizes, as we can obtain more accurate measurements that way. The past is also a convenient sweetener to have on hand, and can be used in smoothies or spread like jam. To make date paste: Soak pitted dates in water for 1 to 2 hours. Drain and reserve the water. Porcess the dates in a food processor, adding the soak water 1 tablespoon at a time as needed, until you have the consistency of a thick jam or butter. Transfer to a covered container and keep refrigerated. This should keep easily for a week, or much longer if frozen.

Three replies, three different ways to make date paste, lol!
The new Cafe Gratitude dessert book (Sweet Gratitude) uses date paste and I follow their method. They simply mash the dates up by hand or with a morter and pestle, no soaking, no adding water.

I too have made date paste just with a mortar and pestle. If the dates are really fresh, don't even need to soak them. It only takes a minute to mash them up and little to clean.

You don't want to schnork a date. It'll hurt. :rolleyes: Schnorking smoozies is bad enough but dates? At least take out the pit. :p
