Does anyone have a use for them? I've been craving an artichoke like crazy lately...

I have some growing in my garden. I will steam them as always and enjoy them. Then I will go back to eating raw.

Here's a soup recipe for artichokes, I didn't like them SAD, but I'll probably try it again with this.
Don’s Pilgrim's Soup
Don and Carmella
(sunnyrawkitchen)
Serves 2 to 4
3 or 4 celery stalks
1⁄2 avocado
2 green onions
1 sm. zucchini
1 med. Jerusalem artichoke
Handful of parsley
Handful of cilantro
1 small tomato
1 tablespoon miso
1 tablespoon raw tahini
2 cups water
Blend all ingredients in high-speed blender until smooth. If desired, warm up gently on the stove while stirring constantly.
Carmella's Note: No need to peel the artichokes before using it; simply scrub it well under running water and cut off any dark spots.

I second the opinion to just steam one and eat it, then continue with all the raw goodness! I have tasted raw artichokes from our old garden in CA - bleah! They need some steam to remove the bitterness and toughness.
Jerusalems are another story entirely...might try that recipe!
