View Full Version : Hummus & Nut-Less Bread

I made chickpea hummus and Nut-Less Bread from Russell James (which dehyd. overnight and had the house smelling really good). I wanted to have something handy since I've been fighting a lot of temptations lately that my regular salad couldn't help. So here's a photo of today's lunch which was so filling and awesome.

From left to right
1. nut-less bread, russell james (that I altered a bit) w/ raw tahini and pepper flakes (I made the tahini with sesame seeds, raw olive oil and water)

2. nut-less bread topped w/ romaine, tomatoes, red onion, marinated mung sprouts (marinade: olive oil, lemon juice, honey, brown mustard, pepper, onion powder, sea salt, thyme) and olives(non-raw)

3. chickpea hummus in romaine leaves topped with olive(non-raw)

4. carrot sticks for dipping (in case any hummus dropped)

Note on hummus and olives:
I had some chickpeas that I soaked overnight and sprouted because I wanted hummus. I actually was intending to cook the chickpeas first, but I said, try it raw. Well, I allowed them to sprout and made the hummus raw. It didn't taste very good and left a bitter taste in my mouth. I didn't want to throw away the raw hummus (I made a ton of it), so I added 1-can of cooked chickpea that I rinsed 3 times. It's not 100% raw, but it doesn't leave that strong bitter taste in my mouth. So, I'll be slowly chomping away at it with romaine leaves and my nut-less bread until its gone.

Also, for the raw police, the olives aren't raw. I'm planning on buying them from a hfs my next vacation trip to Florida. Customs duty & shipping here is VERY expensive and I can't justify paying 200% more for the initial cost to ship raw olives.

Yeah, I make my breads with greens, carrots, and homemade raw tahini. They stay together and have no nuts. You can add a great deal of greens and it will be more fragile, but still workable. I also use sprouted rye and they've been tasty (last batch I added mexican seasonings too for a taco cracko) ha ha.

Thanks for the input folks! Planning ahead makes staying Raw so easy. I'm hoping to get some planning ahead done this week, going shopping tomorrow in preparation.
