I was at whole foods the other day and I noticed a jar of raw tahini for about $10. And then I was in the fridge area and I noticed another jar of raw tahini for about $20. What's the deal? What's the difference? Is there a difference? Are there both raw or is one better?
Same thing for almond butter and cashew butter.

Do you know which brands? That's the only way of knowing if there's a difference. Most that say raw aren't truly raw. Even companies that have some raw products, don't have all raw ones. I've questioned all of the companies to narrow it down.
Of course making your own is the best way of ensuring it's raw.

No, I don't know the brands. One was refridgerated and one was not.

I believe the only 2 raw tahini butters are Artisana and Living Tree.

I made raw tahini yesterday that I had for lunch today on a nut-less bread. Here's the recipe
1 c raw sesame seeds
1/8c olive oil, cold pressed
Up to 1cup water (whatever water you currently drink/cook with)
Method:
I have a KitchenAid blender, so how you process yours might be different. But, I put my seeds in the freezer for a bit because I have to run my blender longer to get a smoother paste. The blender sometimes heat the seeds too hot so I do this to be safe.
Add the sesame seeds to the blender, blend. Then stream in the olive oil. Stream in the water 1/8c at a time. You may need less or more water depending on what type of blender you have, so go slow with the water.
That's it! Raw tahini, my version cost me $3-$4.

You can simply put sesame seeds in your food processor to make tahini, but even making it yourself be very careful as the friction is more than enough to cook it (the first times I tried making almond butter in my FP it got so hot it was steamy and the bowl fogged up, and the butter was hot).
Also don't forgot almost all almonds sold in USA are now pasteurized, I even asked the company called something like Maranatha or whatever and they admitted their "raw" almond butter is made from pasteurized almonds. But even if it wasn't, I'm quite cure the friction involved in processing nuts to butter is enough to unintentionally cook it, even making it in your food processor it can be hard to keep it raw.
A juicer like the green star can make nut butters while keeping it raw due to the slow process, but I've only used it for almond butter, I think the FP works well for tahini as it seems to turn to butter before getting hot.

I agree that the best almond butter/tahini is the kind you make yourself in a good blender/food processor. I recommend starting with frozen nuts/seeds so that it doesn't get too hot.
