I started using the dehydrator but which is the teflex sheet - the plastic with holes or the flat shiny sheet?

When it says to put on non stick sheet would that be the shiny sheet or the plastic holed one?

And last question - when it says to flip over - do you flip the whole thing over or do you try to remove item and then flip?

Thanks - My mother is making a bunch of stuff but first batch of stuff didn't come out right so she is determined to get some things right so just need help with a few things..

The teflex is the shiny (non hole sheet). The mesh sheets are the ones w/holes.
When it says non-stick - that would be the shiny (non hole) sheet.
When it ways to flip? I always take a plastic try with the mesh sheet, please on top of the existing tray with food on it and flip the entire thing over. THEN try to peel food away. If it's really sticking - I flip back over and dehydrate more.
