can you eat them? i seem to remember somewhere that they were poisonous... but they look so delicious! hmmm?

I think I read somewhere here where people have eaten them with no ill effects. Also rashish tops. Have not eaten either. Interesting to find out how they taste, etc.

Hmm been eatin Carrot tops, Radish Tops, Beet tops, for years. They have more value then the actual bottoms. But I always eat both!

I read about using them in Green for Life and have been using them for quite some time. They're a bit hard to come by here in Hungary, but I have one lady at the local farmer's market that keeps them around.

Carrot tops

Ingredients: carrot, carrot top, cucumber, celery, alfalfa sprouts, ginger

Carrot tops are one of the healthiest vegetables around, and people often throw them out or give them away.

They are about as tasty as dandelion, which is pretty ghastly, but they more than make up for this in nutritional benefits.

I add carrot tops to any juice in small quantities. But you can create a carrot top juice if you are especially daring. When doing so combine with milder flavours like cucumber, otherwise your juice will be very strong and the colour a disconcerting dark brown.

Tops from 15 carrots

2 cucumbers

1 celery

A small amount of ginger

Alfalfa sprouts

I would use cucumber and celery as a base for the carrot tops. :) I used to eat the rind of fruits, also...I'm not sure if that's good or bad, but I had a raw foodist who told me they have better nutritional benefits than the fruit. I'm also big on strawberry tops... Those go nicely in any smoothie.

Just be cautious of rinds. Try to use organic and if not - wash thoroughly the non-organic kinds...

I was eating a salad the other day and I had cut up some lemons to use the juice. When I was squeezing them, I thought what I shame to waste all that pulp, so I started nibbling on the lemon pulp, I tasted the rind and it tasted good, so before I knew it I was cutting up the rind in my salad. It was really delish. It was funny because I had been feeling like I was coming down with a cold (you know all of those funky germs you pick up during air travel). After I ate the lemon rind, all of my symptoms disappeared. Must have been what I needed.

If you really want to kick a cold in the crotch, mix lemon with garlic. It tastes simply awful, but it seriously is like a cure-all! Every time I come down with a cold I do that, and wallah, it goes away!
