Important News About Our Shippable 2008 Almond Crop !

D&S Ranches, an Orchard Grower in the San Joaquin Valley of California, has an Important Announcement to make regarding Pasteurization of our Naturally Grown California Almonds! After the Almond Board Rule went into effect we began to extensively research the Best, most Non-Intrusive methods available to reduce bacteria on the skin of the nut without affecting the nut meat itself.

The Good News:

The Good news is that we have found a process that does just that ! This method was developed for the Spices Food Group where any alteration or destruction of the interior of the nut or spice kernel would destroy the delicate value of the item. As it turns out we were able to get this technology approved for application on our Selma California Grown Nut Crop!

How It Works:

The process is very expensive and requires the latest in production technology. It is centered on Water Based Botanical Principles. We call this process H20-UN-Pasteurization. The almonds are held in a chamber that draws down the air to a vacuum, so all the air born bacteria and pathogens are removed from the chamber, then a computer controlled mist of sterile distilled water dry stream is injected in to the chamber. This steam is computer controlled and balanced against the known weight of each nut. As the small amount of Steam condenses on the skin of the nut it transfers only minimal heat energy just to the surface it contacts! The nut meat is never heated internally!

After the dry steam injection, a 4 to 6 second process, the chamber is then evacuated again causing the condensed purified water to evaporate from the skin of the nut. Next the chamber is brought back to normal conditions with HEPA Filtered Air.

This process preserves the internal natural balance of enzymes, amino acids, proteins, and most importantly it preserves the natural living nature of the nut! You can sprout these Almonds !

We are sure you will be very satisified with this process, and as far as we know we are the only Ranch Direct Almond Grower in the San Joaquian Valley of California that is using this expensive, and time consuming process, so that we may bring you the very finest in US Graded Fancy #1 California Almonds !

Please beware of other processes:

We are concerned that there are a good number of other processes out there that are very inferior and some are outright dangerous! The most common is simple autoclave sterilization and this is, essentially, just cooking the nut. After an autoclave process, the nut is no longer living, it is dead, and all the valuable nutrients of the nut have been cooked and destroyed. Unfortunately the Almond Board, under pressure from the Big Almonds Handlers, Processors and Growers are calling and labeling, in the stores, these nuts as RAW ! They ARE NOT RAW! They are COOKED !

Other processes are using PPO (Propylene Oxide Gas). You should never, every under any circumstances eat nuts exposed to PPO Gas. PPO is a known carcinogen (causes cancer). It is toxic and poisonous!.. The European Union (EU) has prohibited the use of PPO Gas on any Human Food Product. The USDA and the FDA still allow it. Inquire with your store if their nuts have been exposed to PPO ! Make sure you know! This is serious business.

Are the days gone where we can simply purchase almonds that were grown in an organic way, picked, shelled, bagged and sold?

That is the kind of almond that would get me to start buying almonds again.

This doesn't seem different from the steaming method already being done for the pasteurization of organic almonds....am I missing something?

You can still get unpasteurized almonds from www.rawfromthefarm.com .
I don't trust anything that's been pasteurized in any way.

They sent me an email and I have to say that I am very disappointed! I purchased a 10 pound bag last year and was planning to do the same this year. How disappointing!

It is too bad but they were under attack- literally- from the "almond Police"- and it was either do it or go out of business. I would rather see them stay alive then be just another farmer lost to the world. Those almonds are still much healthier than the roasted salted kind.

I still have some from last year and although they could no longer say they were raw at that time they were...they sprouted. I feel sick after reading their site regarding this. The loophole in the law said that actual farmers could sell directly to the public....NOW...the law says that they can sell directly to the public but ONLY if the "public" picks them up directly from the ranch. You can buy up to 100 lbs per person per day..they are RAW...untouched (unprocessed in any way)...if I lived there I'd be on my way!!! But...they say their process complies with the current regulations but preserved the living enzymes and integrity of the nut. I ordered some tonight and will try to sprout them as soon as I get them and will post back to share what happens. As far as I am concerned if they sprout it is true.

Funny that I hear that the almond growers are angry with the FDA over all the "mandatory" processing. Look back to posts on this board about the almond board volunteering to cooperate, etc.

I still won't be buying almonds unless/until I can get them raw, un-radiated, un-chemical contaminated, un-steamed--un--whatever else they can do to them to make them un-raw and unusable in my diet.

The nuts in the shell are not affected by all this, but I really don't care to spend my time cracking a bunch of nuts.

If anyone knows of a source that truly has honest to goodness RAW almonds, without any of the above noted tamperings, please post so we all can support the effort.

GlimR ... please let us know if your almonds sprout. I was going to drive over to get some from them as they are not that far from me but if your almonds are sprouting... thats good enough for me....and saves me the gas.

I found out after I had already placed an order a month or so ago for my mom that they were no longer unpasteurized. I was so disappointed. She loved the almonds, is still enjoying them, they sprout. I don't know what to say about this one because it's a sort of catch 22, it seems.

I personally was grossed out by the almonds I found over here in Hungary (that were bagged and supposedly raw), and I have been shelling my almonds. They are so fresh that way, and I know that no one has done anything to them. Works for me.

really? that's fantastic news! one measure of how many nuts i should eat is how many i can easily shell myself in one sitting. i know it's more convenient already shelled but i think nature puts them in there for a reason. this is a perfect solution for me. glad to hear it!

When you say "sprout", do you mean actually grow a visible 1/2 inch tail or that the end gets a "bump" on it? Most books that reference almonds say they bulk up and get a bump on the end but not a visible sprout.

Well, I found a place that grows and picks the organic almonds, shells them and puts them in a bag (just what I want). Nothing more/nothing less--no freezing, spraying, nut skin surface steaming, or gassing. Just nuts from the shell. Ordered a 5 lb. bag today which will ship on Monday. If anyone is interested, the company is OrganicPastures.com. They also deal in raw dairy (I don't do dairy of course).

Will post how they come and how my almond butter comes out when I make it.

Alrighty then....here are the results of my "sprouting" the new almonds from D&S Ranch.........in my estimation they sprouted and are alive, containing the life force necessary to grow.....I ate the little sprouts...they don't taste like the almond they taste fresher and more mild, softer as a sprout would.....I will continue to buy these.

I soaked them for about 24 hours, changing the water several times, rinsed them and then let them sit in a colander for 6 hours or so.......

I always order from them but it looks like they have more variety now...which kind should I get??? Non-pareil, Carmel, or Aldrich??

The non-pareil are the "regular" ones...they are the ones I got this time and once before...very good. The last time I got the aldritch...they really do have amacaroon type flavor..really yummy. I liked them very much for almond mylk too...they are both good...haven't tried the Carmel.

Okay, I bought the Aldrich...I'm curious about the macaroon taste...sounds YUMMY! I have been buying the non-pareil from them (how do you pronounce that?!) and those are good too, but I was hoping for something different this time.

I soaked in room temp water on the counter and rinsed several times, then into the colander and only rinsed when I was ready to put them back into clean water to store in the fridge. Once in the fridge I rinse and change the water every other day. They keep beautifully for aweek or so that way.

yes your right about that ...maybe sometime when i take a trip thru that area i will make a point of stopping in to buy almonds. they are about 5 hours from me so its not close but its not impossible. if i really needed the almonds i would drive over there. LOL but thanks to you...now i dont have to.

I didn't know what an almond sprout looked like. But my raw almonds from Costco looked like GlimR's photo when I was done soaking them... (for what that's worth - wink) *Ü*
