I got a bunch of wild persimmons at my farmer's market - any suggestions for what to do with them? I'm kinda thinking along the lines of a relish or compote of some sort, maybe with cranberries/orange peel, perchance some nuts, but I'm not sure if that'd go with persimmons, having never worked with them before. I just can't eat them all before they go bad! :)

I don't know what wild persimmons are, but the flat variety (Fuyu) are excellent cut up and simply enjoyed. Occasional large flat black seed that you don't eat. Wonderfully sweet.
If they are the round variety, they must be fully ripe as in quite soft (mushy) and are reallty good in a pudding or in a smoothie. Wow--hope you enjoy whichever variety you have.

Oh I can eat about 7 for a meal. I have made a pie with them before using some soft ones blended together with some firmer ones. I just threw it together with no recipe. I made a simple crust but added in some coconut flakes. I added soaked dates and cinnamon to the persimmon mixture, nothing fancy, and it was delicious.

They are the only other fruit (other than blueberries) that I have found to thicken after blending so they make a great pie filling.

Ice cream! Frozen peeled 'simmons, frozen 'nanas, a lil cardamom and/or agave in the fp and you've got 'simmon ice cream.
Or, pudding ~ same thing just don't freeze first. Freeze after you eat the pudding for a frozen treat.

1 banana
3-4 celery stalks
No water. Blend persimmons, then banana, then 3-4 celery sticks until smooth.

for the ice cream - do you mix it all together first, then freeze? or freeze separately, then put in FP?

I've never had a persimmon, and saw them at the store and was wondering if you can eat the peeling and all? I guess you can. I think I'll give them a try next time I see them! Thanks for posting. I think I'd like to make a pie with them, I'll just have to see if I actually see them anymore!!

I can tell you about the flatter ones ~ eat skin and all... soft yet still firm. The longer ones, have to wait until they are really soft. Never ate them so don't know about eating the peel. This is the season. They should be out for a few more weeks.

I ate my first persimmon ever last week. It was squishy and good. I wish I could have another!
