Beets..any idea's ?

I have a 5 pound bag of beets that I bought yesterday at the International market. Other than making a veggie juice with them anyone have any tasty idea's?

Haven't tried this, but sounds good.

Spaghetti:
Zucchini
Carrot
Beet
Sauce:
Tomato
Beet
Olive Oil
Green Olives

You can also make a salad with shredded carrots, apple, parsley, olive oil.

I made ravioli with them tonight.
Take em, peel, then slice very thin in circles.
Make a cheese by taking 1/2 cup mac nuts or cashews
teaspoon dried tarragon
teaspoon dried thyme
a few green onions chopped
1/2 of a lemon, juiced
teaspoon nutritional yeast
dash of salt --blend all until cheese-like :)
Put in the middle of two beets and squish together. Yum!

Grate them finely and dress with a sweet vinaigrette flavored with orange or lemon juice. Toss in some chopped walnuts and maybe some parsley.

Make a batch of Borstch.

grated beets, grated granny smith apple, chopped celery, apple cider vinegar, EVOO, S/P. so easy and so good!

I did have some veggie juice today with beet in there, and had it in my salad for lunch- they are very sweet and a little messy but delish:)

i like beet/carrot/apple juice. and shredded in salads.

I love beets grated and dressed with a dijon vinaigrette.

There's also a drink called Hot Pink in RFRW that uses beet juice, I think.
